You don’t always need regular potatoes to make a good stew. This iteration of the classic beef stew uses sweet potatoes and makes a delicious sweet potato stew.

How to Make Sweet Potato Stew
To begin making this sweet potato stew, heat a large skillet over medium-high heat on the stove. Add in some oil and heat. Now it’s time to fry the beef. Place the beef in the skillet and fry until it’s browned on all sides. Once it’s cooked, put it in the bottom of the slow cooker.
Now you want to add in the vegetables, so add in the onion, garlic, sweet potatoes, celery and bay leaves. In a large 8 cup measuring cup, whisk together the remaining wet ingredients and mix until combined. Pour over the beef and vegetables and give it a stir.
Cook everything on low for 8-9 hours or, if you need it sooner, on high for 5-6 hours.
