Looking for an easy way to do mashed potatoes in a hurry and don’t own an Instant Pot? Not to worry, microwave mashed potatoes are quick, easy and believe it or not, completely doable. Want a nice spin on your mashed potatoes? Try these Buttery Garlic Mashed Potatoes too!
They also go very well with Slow Cooker Cube Steak & Mushroom Gravy or Slow Cooker Pot Roast With Onion Mushroom Gravy.
How to Make Microwave Mashed Potatoes
To begin, prepare like you normally would. Peel some potatoes and cut them into small chunks like in the picture below. Now place them in a microwaveable dish or bowl that has a lid and add 1/4 cup of chicken broth.
Place them in the microwave and cook on high for 10-12 minutes or until they can be pierced through with a fork easily.
Once done, remove from the microwave and mash with a potato masher. Add in 1-2 tablespoons of butter and mash until soft. If you like, you can also use a hand mixer to whip them into shape quickly (my personal preference).
That’s it. Serve by themselves or with a main meal and enjoy!
Happy Cooking!
