Easy Crockpot Macaroni Hamburger Soup

This has become a new favorite to make in our slow cooker! I love a good hamburger soup, but adding noodles to it turns this into a really hearty meal. On its own hamburger soup is filling but once you get those elbow macaroni noodles in there, you almost have a plate of pasta!

  • Use your favourite frozen vegetable mix, I happen to love the one with lima beans! You an use just peas and carrots, just corn and carrots, really this is such an an easy soup to customize that you really can’t go wrong with any choices!
  • The tomato soup is what gives this classic soup that really retro taste like what your Mom or Grandma used to make. If you don’t want to use it, you can add a can of diced tomatoes and a little extra salt instead.
  • You can definitely sub in ground turkey for the meat if you want!
  • This is an easy recipe to double if you have a large crockpot.
  • This is a hit at parties, make it and let guests help themselves!

Ingredients
 

  • 1 1/2 lbs lean ground beef
  • 1 medium white onion diced
  • 2 tsp minced garlic
  • 28 oz can of diced tomatoes
  • 10.75 oz can of condensed tomato soup
  • 4 cups strong beef broth
  • 2 bay leaves
  • 1 tsp dried thyme
  • 2 cups of frozen mixed vegetables
  • 1/2 tsp white sugar
  • black pepper to taste
  • 2 cups uncooked elbow macaroni

Instructions
 

  • Fry the ground beef and onions together until the ground beef is cooked and the onions are translucent. Add in the garlic and fry until brown. Drain the fat and place in the bottom of a crockpot.
  • Stir in the tomatoes, tomato soup, beef broth, bay leaves, thyme, frozen vegetables, sugar and pepper.
  • Simmer on high for 4-5 hours or on low for 8-10.
  • Right before serving, cook the macaroni to al dente according to the package directions. Drain and add to the hamburger soup.
  • Remove the bay leaves. Ladle into bowls and serve.

      This soup is delicious and super easy. However forgot to lower the number from 8 to 4…so there’s a lot there. Do you think I can freeze some?

    This is similar to my veggie soup – sometimes I put hamburger in and sometimes I don’t (only because when I eat beef several days in a row, underneath my eyes swell and dr said it’s a sensitivity to beef when one is sensitive to it. I do not put tomato soup either – only because I have to watch the acid) – but I will put fresh tomatoes in, whorestershire (*sp), celery and potatoes – and all other veggies. I can eat it everyday – and did once when I was trying to lose weight and got down to my idea weight which was smaller than I was in my early 20’s. Thi sis a great soup – I do not put as much noodles in mine, but I do put some in.

    Tried it out for the first time. I used beef and pork. My husband and son both enjoyed it. We did use something different from your recipe we used some
    V-8 Juice . Love it

    I was raised on this type veggie soup, only we called it “Slumgullion” . This was before slow cookers and instant pots were popular so we just dumped in any leftovers from the fridge that we wanted and let it cook till the pasta was done. Very hearty with cornbread during cold weather. My kids were raised on it also!!! Quick n easy. Thanks for sharing.

    haven’t tried yet, but will do it on stovetop. Love the idea of leftovers from fridge, too. As far as the sugar… I’m sure it doesn’t matter when you add it. I believe it is for cutting the acidic taste from the tomatoes or tomato soup. Too bad the person who posted this soup doesn’t answer the questions from readers…

    I tried this soup according to the recipe and it was very good. I will use this recipe next week for a soup kitchen I work at and multiply X 12 to cook for 100. It’s a hearty soup, I will serve it with crackers, grilled cheese sandwich’s, salad, and fruit. Thank you for a good soup recipe that is easy and nutritious.

    Could you also put the pasta in and let it cook with the rest of the soup?

      No. You put it in the last 30 or 40 minutes. Other wise it will be mushy . I cook my macaroni in a separate pot and add it in as I’m ready to serve or add it to individual bowles n pour soup on top.

    I don’t like garlic in my soup, so I omitted it and used Italian Seasoning. The soup was VERY tasty. Next time I will either halve the amount of macaroni or use more beef broth, as I found it not brothy enough for my liking. Very good, though. My first time making hamburger soup.

    Why do you cook it for so long since everything’s pre cooked except vegetables is this something you could cook in like 30 min?

    I made the mistake of adding the noodles to the crockpot and letting them cook the whole time. 🤦‍♀️ The noodles were all mushy and not good. Next time I’ll know.
